Ingredients (~8 servings):

3/4 basket of fresh spinach, cleaned and rinsed

1 cup of King of Juicy Medjoul Dates, diced (preferably Deglet Nour and Amari)

1/2 basket of sliced strawberries or any other fruit

Dressing:

Juice squeezed from half an orange

5 Tbsp. white wine vinegar

3 Tbsp. quality olive oil

1 Crushed garlic clove

3 Tbsp. honey

2 Tbsp. Dijon mustard seeds

Preparation:

Dice the King of Juicy Medjoul Dates.  Separate the rinsed spinach leaves and mix with the strawberries.  In a small bowl, mix the dressing ingredients.  Add the diced King of Juicy Medjoul Dates to the salad, pour the dressing on top, mix, correct the seasoning and serve immediately.

 

Spinach and King of Juicy Medjoul Date Salad

Ingredients:

8 King of Juicy Medjoul Dates, medium

20 Peeled almonds

Preparation:

  1. Grind the almonds using a spice grinder until a paste is created.
  2. Slice the King of Juicy Medjoul Date lengthwise and remove the pits.  Prepare a small role of marzipan with your hands and fill the King of Juicy Medjoul Date.
  3. Cut each King of Juicy Medjoul Date into 3-4 equal parts and place on a paper baking cup.

King of Juicy Medjoul Dates filled with Homemade Marzipan

Ingredients (4 servings)

2 Tbsp. olive oil

1 Onion, sliced into strips

250g Chicken breast, sliced into strips

1 Red pepper, clean of seeds and fibers, diced

2 Crushed garlic cloves

1/2 cup Chopped asphodel

100g King of Juicy Medjoul Dates, pitted, sliced into strips

3 Tbsp. natural date honey, sugarless

1/4 glass of red wine

Salt, pepper

Preparation:

Heat the oil in the oven, sauté the onion until brown, add the chicken strips and sauté for 5 minutes.

Add the red pepper, garlic, asphodel, King of Juicy Medjoul Dates and date honey.  Mix for 2-3 minutes.  Add the wine, cook for ~7 minutes until the sauce thickens.  Season with salt and pepper and serve immediately.  Recommended with rice.

Sautéed Chicken with King of Juicy Medjoul Dates

Ingredients (~8 servings):

3/4 head of Romaine lettuce or a similar quantity of green and purple lettuce

2 Medium red apples, diced into small cubes

Seeds of a single pomegranate

1 cup of diced King of Juicy Medjoul Dates (preferably Deglet Nour, Halawi, Deri)

1/2 cup of crushed walnuts

Dressing:

3 Tbsp. Olive oil

3 crushed garlic cloves

2 Tbsp fresh date honey, sugarless

3 Tbsp. red wine vinegar (Balsamic vinegar optional, or both)

Preparation:

Dice the King of Juicy Medjoul Dates and crush the walnuts.  Tear the lettuce into strips and mix with the pomegranate seeds.  In a small bowl, mix the dressing ingredients.  Slice the apples and add them to the salad.  Add the diced King of Juicy Medjoul Dates and the walnuts.  Pour the dressing on top, mix and serve immediately.

Green Salad with Apples and King of Juicy Medjoul Dates

Gali Lupo Altaretz

A sugarless sweet pastry based on King of Juicy Medjoul Dates and whole flour.  Healthy energy for the morning or between meals.  Good for children as well.

The muffins can be refrigerated for up to 3 days.

The muffins may be frozen (separately wrap each one in saran wrap) and sent to school or work when they are frozen.  The muffins will be ready to eat within two hours, tasting as if they just came out of the oven.

Ingredients:

8 Medjoul dates

2 Ripe bananas

1/3 cup Apple sauce (or one peeled and diced apple)

1/4 cup grape seed or canola oil

1 cup whole flour (preferably 70% whole flour) or whole spelt flour.

A pinch of salt

1 tsp. baking powder

1/4 tsp. baking soda

1/2 tsp. vanilla extract

1/4 tsp. cinnamon (optional)

1 tsp. lemon juice/apple vinegar

Preparation:

  1. Place all of the fruit and oil into a bowl – Pitted King of Juicy Medjoul dates, peeled bananas, apple sauce or peeled and diced apple – and mince using a pole blender.
  2. Place the flour and the rest of the ingredients into a bowl and mix with a spoon or spatula in order to combine the ingredients.
  3. Place a full spoon of the batter into a baking pan (silicone) to prepare a total of 12 medium sized units.
  4. Bake at 180° for 25-30 minutes.
