Sugarless King of Juicy Medjoul Date Muffins

A sugarless sweet pastry based on King of Juicy Medjoul Dates and whole flour. Healthy energy for the morning or between meals. Good for children as well.
The muffins can be refrigerated for up to 3 days.
The muffins may be frozen (separately wrap each one in saran wrap) and sent to school or work when they are frozen. The muffins will be ready to eat within two hours, tasting as if they just came out of the oven.
Ingredients:
8 Medjoul dates
2 Ripe bananas
1/3 cup Apple sauce (or one peeled and diced apple)
1/4 cup grape seed or canola oil
1 cup whole flour (preferably 70% whole flour) or whole spelt flour.
A pinch of salt
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. vanilla extract
1/4 tsp. cinnamon (optional)
1 tsp. lemon juice/apple vinegar
Preparation:
- Place all of the fruit and oil into a bowl – Pitted King of Juicy Medjoul dates, peeled bananas, apple sauce or peeled and diced apple – and mince using a pole blender.
- Place the flour and the rest of the ingredients into a bowl and mix with a spoon or spatula in order to combine the ingredients.
- Place a full spoon of the batter into a baking pan (silicone) to prepare a total of 12 medium sized units.
- Bake at 180° for 25-30 minutes.
